Cranberry Honey Glazed Salmon

Ingredients
4 salmon fillets
Salt & pepper
1/2 cup Fresh cranberries
Fresh dill for garnish
FOR THE HONEY MARINADE/SAUCE:
1/3 cup Honey
1/3 cup Soy sauce
1/4 cup Cranberry juice
2 tablespoons Bourbon (optional)
1 teaspoon Smoked paprika
2 cloves Garlic

Step by Step Instructions
  1. Whisk all of the honey marinade ingredients together in a small bowl and set aside.
  2. Put the fillets into a sealable plastic bag, then put half of the marinade mixture over them and gently coat them with it. Refrigerate for 30 minutes.
  3. Preheat oven to 400 degrees and line a baking sheet with parchment paper. Discard the marinade that's in the bag, season the fillets with salt & pepper and bake for 10 to 15 minutes.
  4. While the salmon cooks, combine the unused marinade mixture and the fresh cranberries in a saucepan over medium heat. Bring to a boil then reduce to a simmer and let cook for 5 to 8 minutes.
  5. Serve the fillets topped with sauce and garnished with fresh dill.
